As most of you have seen Banting has become a foodie buzzword the past year with more and more people cutting down on carbs and eating more fats. I’ve realised that the most popular substitute for carbs seem to be Cauliflower and even though I don’t Bant, I thought I would try out a Cauliflower Base pizza. I really loved it and I make it quite a lot, as I loveeeee Pizza, literally, if I could eat only one thing for the rest of my life it would be Pizza.
The Recipe is super easy and also very yummy, as a self-proclaimed Pizza expert I can vouch this is really a yummy “healthier alternative” to takeout Pizza.

Baking Time: +- 35 Minutes
Overall Time: +- 50 minutes
Recipe yields about 9 Mini Pizzas
Cauliflower (1 Big Cauliflower head = 3 1/2 Cups Grated)
1 1/2 Cups Grated Cheese
Pizza toppings of your choice (I used Tomato paste, cheese & feta Cheese)
Grate the Cauliflower head till there are 3 1/2 cups of grated Cauliflower. If you have a food processor, you can also pulse it until it becomes ‘grated’. To make it easier, I cut off most of the cauliflower stems.
Microwave the grated cauliflower for 7 minutes until soft. Once you put the cauliflower in the microwave you can pre-heat the oven to 180 degrees Celsius.
Spray a baking tray with non-stick cooking spray. Grate the cheese to 1 1/2 cups and break and whisk the eggs in a separate bowl.
Once the cauliflower is done in the microwave let it cool for a few minutes and then add the eggs and cheese to the cauliflower. Mix until everything is combined.
Use a tablespoon to scoop the cauliflower mix onto the baking tray. Make the mini pizzas the size you want but make sure they are about 1cm high.
Then turn your oven to 210 degrees Celsius and put the pizzas in the oven, bake for 15 minutes.
Flip the mini pizzas over and bake for another 5 minutes, until golden brown on both sides.
Let the pizza bases cool for a bit and then add your toppings of choice. Bake / grill for another 5 minutes until all the toppings are heated or if you add cheese, until the cheese is melted. I prefer to grill the toppings because the cheese gets nice and melty..
Serve the Pizzas and enjoy!
