As previously mentioned Butternut is my favorite veggie ever. As it is finally winter I attempted to make Butternut Soup for the first time ever, this was actually the first soup I have ever made, except for the “Just add water” cup-a-soup… Not the same thing.. The recipe is very easy, like I said this was the first time I made soup. It is a perfect soup recipe to try for the cold winter nights ahead.
Preparation time: +- 40 minutes
500g Butternut – Cubed
Cream of White onion Soup Powder
Salt & Pepper to Taste
Boil butternut cubes in water in a Big pot, make sure all the butternut cubes are covered in water – I used about 6 Cups of water to boil the butternut in. Boil for 15 minutes on medium heat.
Once the butternut is done boiling throw the water out of the pot. Add 1/2 a Cup of hot water to the butternut and blend untill smooth.
In a separate bowl or beaker mix the packet Cream of Onion Soup Powder with 500ml boiling water, whisk untill smooth and thick.
Add the Cream of onion soup to the mashed butternut in your pot and mix it together. Add salt and pepper to taste. Add water to dilute the soup untill it is to your liking. I only added 1/2 a cup of water.
Let the soup simmer on the stove on medium heat for another 5 – 10 minutes and stir occasionally.
Dish the soup and enjoy, I like to add feta as garnish and serve the soup with toast.
