Bacon Flapjacks

Tired of the same old Bacon and eggs for breakfast.. I’ve got you covered.. Try out these yummy Bacon flapjacks for something different.. You won’t regret it..

Recipe makes 4 Bacon Flapjacks

Ingredients:

– 4 Pieces of Bacon
– 1 Egg
– 1/4 Cup Sugar
– 1/2 Cup of Milk
– 1 Tablespoon Butter/Margarine
– 1 Cup All Purpose Flour
– 2 Teaspoons Baking powder
– 1/4 Teaspoon Salt

Directions:

– Flapjack Mix:

Beat egg, sugar, melted butter(or margarine) and 1/4 Cup of milk together.
Sift All purpose flour, Baking powder and salt into mixture and beat until it’s combined.
Add the leftover milk and beat until everything is blended completely, the mixture will have a smooth look.

– Delicious Bacon Flapjacks:

Cook the bacon. I don’t use oil to cook bacon, just some non-stick cooking spray.

Spray your pan with non-stick cooking spray and scoop some of the flapjack mix in the pan.
2 to 3 tablespoons of the mix will be enough,depending on how big you want the flapjacks to be.

 Place a piece of the cooked Bacon on top of the raw flapjack mix in the pan.

Cover the piece of bacon completely with more flapjack mix.

Once the flapjack mix under the bacon starts to bubble,flip the bacon flapjack over to bake the other side. You will need to flip the Bacon flapjacks a few times. The Flapjacks will turn a golden brown colour once it is baked.
Tip: I use a spatula to press on the Flapjack to see if any raw dough seeps out, if this happens I flip it again and press on the other side, once no more raw dough seeps out your Bacon flapjacks are done!
